BAKED HALIBUT IN TOMATO SAUCE AND CREAMY OLIVE CITRUS MINT SAUCE

Serves:             8

1 cup fat free mayonnaise

½ cup olive oil

6 cloves of garlic, minced

¼ cup mint leaves, minced

¼ cup orange zest        

¼ cup lemon zest  

1 large can sliced olives (14.5), drained and rinsed

Baked Fish

8 pieces (6oz) halibut steaks, skin removed.

3 tablespoon olive oil

1 small can crushed tomatoes

¼ cup light soy

1 cup vegetable broth

¼ cup balsamic vinegar


Pre heat oven to 425 F.

To make the sauce, using a medium mixing bowl combine the mayonnaise, oil, and garlic together. Add the remaining ingredients making sure it is well combined. Set aside.

In a bowl, coat the fish fillets with olive oil, salt and pepper. In a medium sauce pan, heat crushed tomatoes, soy, 1 cup of vegetable broth and balsamic vinegar and bring to boil, around 2 minutes. Continue to cook over medium to high heat until mixture is slightly thicken, 5 minutes. Remove pan from stove. Pour the sauce into a baking dish then place fish on top of the tomato mixture. Bake until the fish is opaque throughout, about 20 minutes. Remove from the oven and top each fish with the creamy olive sauce.  You may serve directly from the baking dish.
