BAKED PARMESAN FISH ROLLS WITH WASABE CREAM MAYONNAISE

Cooking time: 8 minutes
Yields: 12 rolls
12 medium shrimp, peeled and deveined, chopped
3 sprigs scallion, chopped
¼ cup cilantro
½ cup oyster sauce
1 cup button mushrooms, chopped
½ teaspoon salt and pepper
1 teaspoon sugar
12 pieces, West Coast Dover Sole fillet – 1 ½ pound – boneless
1 ½ cup shredded parmesan cheese or more if desired
Pre heat the oven to BROIL at 400 F.
Combine all ingredients except the Sole and the cheese in a food processor or a blender and process until becomes smooth and paste like.
Remove from processor and transfer to a bowl. Lay all the fillets in a flat surface. Divide evenly the shrimp mixture by spreading it on one side of each fillet.
Roll each fillet making sure the spread is tucked inside. Secure with a toothpick. Coat a bake tray with a cooking spray and gently lay all the fish rolls.
Mound cheese on top of each roll and place the tray 8 inches away from the broiler. Broil for 8 minutes or until the fish is cooked and cheese are melted and brown.
Dollop with wasabe cream and serve right away.
WASABE CREAM MAYONNAISE
Prep Time: 2 minutes
Yields: ¾ cup
¾ cup fat free mayonnaise
2 tablespoon wasabi
½ cup fat free cream cheese, softened
1 teaspoon garlic powder
Combine all ingredients in a food processor and process until smooth.
