BAKED PLANTAINS

 

Prep Time:        5 minutes

 

Cooking Time:    1 hour

 

Serves:            12

 

 

4 ripe plantains

 

2 teaspoon olive oil

 

2 teaspoon sugar

 

4 tablespoons butter

 

2 cups Low fat Cheddar cheese, shredded

 

1 cup shredded coconut, toasted

 

 

Preheat oven at 325 F.

Peel and grease plantains with oil and sugar.  

Wrap each plantain in aluminum foil and bake on a baking sheet for 1 hour.

Unwrap and top with butter – while warm, spread cheese on top.

Cut on a angle ¾“ thick.  

Place on a plate and sprinkle with coconut – serve.
