BAKED SEAFOOD PAELLA

2 tablespoon olive oil
1 yellow onion, peeled and diced small
1 package chicken sausage, cut into ½ inch thick (4 pieces in a package)
1 cup of Arborio rice
½ tablespoon saffron threads
½ cup dry white wine
1 small canned tomato sauce, 8 oz
1 can crushed tomatoes, 14 oz
1 bottle clam juice, 8 oz
1 medium size red bell pepper, seeded and diced small
½ pound of the following: medium size shrimp, peeled and deveined
Calamari or squid, cleaned and cut into ¾ inch rings
Bay scallops
1 cup frozen green Peas, 8 oz
½ cup grated parmesan cheese- OPTIONAL
½ cup heavy cream - OPTIONAL
1 cup chopped basil leaves
Pre heat oven to 350 F
Heat the oil in a large non stick deep sauce pan over medium heat. Add onions and sausage and cook for 3 minutes until the onions are soft. Add rice, saffron and cook stirring constantly for 30 seconds. Add wine, tomato sauce, crushed tomatoes and clam juice. Bring the liquid to boil stirring constantly, about 3 minutes. Add bell pepper and the shell fish. Adjust heat to medium and simmer for 7 minutes stirring constantly. Cover and bake at 350 F for 20 minutes. Remove from oven, stir in cheese, cream, peas and basil leaves. Return to oven and bake covered for another 15 minutes. Remove from oven and let stand for 10 minutes before serving.
