BASIL AND PEA SOUP


Prep Time: 2 minutes

Cooking time: 5 minutes

Serves: 2


1 can (14.5 oz) low sodium or fat free vegetable or chicken broth

2 cups frozen peas

1 cup fresh basil leaves, chopped

2 tablespoon of heavy cream - optional

Salt and pepper to taste

Heat the broth in a small sauce pot and bring to boil; 3 minutes. Add peas and cool down for about 1 minute. DO NOT PROCESS THE SOUP IN THE BLENDER IF IT IS STILL HOT. IT MAY EXPLODE.

Process in a blender adding basil leaves until smooth.  Return soup to the pot and slightly simmer for another minute. DO NOT OVERCOOK BECAUSE THE SOUP WILL TURN GRAY.

Add the cream, salt and pepper and switch off stove. 

Ladle and evenly divide soup into 2 soup bowls. Serve hot.
