Bistek Tagalog with Mushrooms and Basil

Serves: 4
4 tablespoon olive oil
1 pound beef tenderloin, sliced into ¼ inch thick
1 small red onion, peeled and sliced into thin half rings
1 small red bell pepper, seeded and cut into matchsticks
4 cloves of garlic, minced
½ cup light soy sauce
½ teaspoon white sugar
1 package button sliced button mushrooms, (8 oz)
Juice of 1 lemon
1 cup Thai Basil – torn apart
Heat 2 tablespoon oil in a wok or a medium sauté pan and fry the steak over high heat until browned; about 3 minutes. Remove from pan.
Add remaining oil then add the onions, garlic, mushrooms, bell pepper, soy and cook for another 2 minutes.
Dissolve sugar with the lemon juice using a small bowl then slowly add to the pan. Let it cook for another minute.
Add beef slices and toss with the sauce mixture. Add Thai basil. Serve with steamed rice.
