Cajun Jambalaya

Ingredients:
1 large onion, chopped
1/4 garlic or 2-3 cloves, chopped
1 large bellpepper, chopped
2-3 green onions, chopped
2 sticks of celery, chopped
2 cups of chicken breast, boiled for 30 minutes, and cut in pcs
2 cups of mixed hot sausage, chopped
2 cups of tocino, chopped
2 cups of ham, diced
3 cups of uncooked rice
salt and pepper to taste
2-3 chili peppers, chopped
water
Procedure:
In a large dutch oven, put a little oil and let it warm up. Add
meats and fry for 2-3 minutes.
Add onion, garlic, celery, peppers, and cook for another minute or two. Add uncooked rice and mix well.
Add water until it is even with the top of the ingredients. Cook on
medium heat for about 15 minutes, or until the rice is cooked.
Leave on very low heat to continue to cook some of the liquid out (like cooking
rice).......serve with your main dish or as a side dish.
If you would like to take some to work, toast 2 slices of bread, and
put mayonnaise on 1 side and mustard on the other side, and place some
jambalaya in between the bread slices, and enjoy.
