Cassava Cake

4 cups fresh cassava, grated

3 cans evaporated milk or 4 cups coconut milk

3/4 c sugar

4 eggs

1/2 stick butter

1 bottle macapuno, drain syrup out


For topping

1 can condensed milk

1/2 c flour

2 tbsps brown sugar

2 cans coconut cream


Mix milk, sugar, eggs, melted butter.  Add to cassava. Add macapuno. Pour onto buttered 9x 13 pan and bake for about 40mins in a 325 oven.


Mix sugar and flour, add condensed milk, then the cream.  Pour over baked cassava cake and put back in the oven for another 15 mins.
