Chocolate Cheesecake

Serves: 8 - 12
FILLING:
4 packages non fat cream cheese, softened
1 cup sugar1 teaspoon vanilla
1 package Semi Sweet Chocolate Morsels, melted in microwave, slightly cooled
4 eggs
CRUST
18 Oreo cookies, finely crushed
2 tablespoon butter
CRUST
Mix crumbs and butter, press onto bottom of 9-inch springform pan. Bake at 325 F for 10 minutes. Let cool.
FILLING
Beat cream cheese, sugar, and vanilla with electric mixer until well blended. Add chocolate and eggs and mix until blended. Pour over crust.
NOTE: THE BAKING TIME SOMETIMES DEPENDS ON THE QUALITY OF THE CAKE PAN YOU ARE USING.
Bake at 325 for 65 minutes or until center is almost set if using a DARK springform pan. Run knife around rim of pan to loosen the cake. Cool before removing rim of pan. Refrigerate 4 hours or overnight. Slice and decorate with fresh berries and a mint leaf if desired.
