SUMMER CITRUS AND MINT BREEZE
Prep Time – 5 minutes
Yield – 6 servings
Juice of 1 lime
Juice of 1 large orange
½ cup of mint leaves, coarsely chopped
2 cups of Pineapple juice
2 tablespoons sugar
½ cup Vodka - I use grey goose or absolut (use less if desired)
½ cup rum – I used Bacardi (use less if desired)
3 cups of iced cubes or crushed ice
Orange and Lime wedges for garnish
Combine all the above ingredients in a heavy duty blender except for the ice and the garnish. Press “ice crush” until all the ingredients are well combined.
Strain to remove the mint leaves particles.
Put back the cocktail into the blender and add the ice and process again until the ice are well crushed.
Put a few ice cubes in 6 cocktail glasses and evenly divide the cocktail mix among glasses.
Garnish with lime and orange wedges. Serve right away.
