CORNED BEEF QUESADILLA WITH MANGO AND BRIE CHEESE – served with mango guacamole and cilantro sour cream

Cooking Time:    25 minutes

 

Serves:            10-12    

 

8 oz Brie cheese, chopped

2 ripe Mango, chopped

1 package 14 oz (8 in.) flour tortillas

1 12 oz can corned beef, sliced thin

1 avocado, chopped

½ cup fat free sour cream

¼ cup cilantro leaves

½ teaspoon salt

¼ teaspoon white pepper

¼ teaspoon sugar

 

In a small bowl, combine 1 chopped mango and Brie cheese.  Distribute onto ½ of each tortilla - top with corned beef.  Fold each tortilla in half.  Heat on a non-stick heating 10 in. skillet for 2 minutes each side.  Cut in half and serve with Mango Guacamole and cilantro cream.

 

For the Mango Guacamole – Combine remaining mango and avocado.  Season with half of salt and pepper.

 

Cilantro cream sauce – Puree cilantro leaves, sour cream, remaining salt, pepper, and sugar.
