CRAB CAKE

1 pound lump crab meat

1 tbs. shallots

1tbs. garlic

1 cup bell pepper

1 spring onion white part only

vegetable oil

bread crumbs

1 egg lightly beaten

1 tbs. dijon mustard

1/2 cup mayonnaise

salt and pepper


Saute the vegetables, set aside.

Mix the crab meat, mayonnaise, mustard,  egg, and a tablespoon of bread crumbs and then salt and pepper to taste.


Form a ball and flatten it.  Dredge into breadcrumbs.

Fry with vegetable oil in medium heat.

Serve hot.
