German Potato Salad by Dave Pellikan
Ingredients:
8 large potatoes
4 green onions
3 slices of bacon
½ cup Vinegar
3-4 cup Apple cider vinegar
Salt and pepper
1 tspn corn starch
Directions:
Place the potatoes into a pot and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until they are fork tender. Drain and set aside to cool. Then peel and slice put in bowl. Chop up bacon and place in a large deep skillet over medium-high heat. Fry until browned and crisp, turning as needed. Remove from the pan and add to bowl. Chop onions add to the bacon grease and lightly sauté, then pour over bowl. In a sauce pan bring vinegar to a boil then add corn starch let thicken, then pour over potatoes, mix, salt and pepper to taste.
