Lemon Pepper Grilled Tuna Panini

Cooking time: 5 minutes
Making the sandwiches – 3 minutes
Yield: 2 big paninis for 2 people as lunch or light dinner
½ lb tuna steak - cut it into 2 ½ inches length, ¾ inch thick, 2 ½ inch width resulting to 4 pieces medallions
1 tbsp – Lemon and Herb mix – I used McCormick’s
1 tsp pepper
2 large Ciabatta rolls – sliced. 4 oz total weight, 4 ½ inches diameter
2 teaspoon Fat Free Mayonnaise
1 small ripe but firm avocado – peeled, pitted and sliced into ¼ inch thickness
3 tbsp pickled ginger
2 tbsp horseradish sauce
Non Stick Fat Free Cooking spray
In a small mixing bowl combine lemon herb mix and pepper. Rub tuna pieces with the mix and set aside. Pre heat grill pan for about 1 ½ minutes. Spray grill with non stick cooking spray and grill tuna 1 ½ minute each side.
Lay Ciabatta halves inner side down on the grill and grill for 3 minutes next to the tuna steaks. Remove the bottom part of the rolls and spread 1 tsp of mayonnaise followed by 1 tbsp of horseradish sauce on each.
Lay 2 pieces of tuna steak on top of each bottom part. Arrange and evenly divide avocado slices on top of tuna steaks. Add pickled ginger. Remove top part of the rolls from the grill pan and cover the tuna steaks making it as sandwiches.
