Marinated Daikon with Cucumber Mango Salad



Ingredients:

Yields: 4 servings


Marinade:

½ cup rice wine vinegar

1 teaspoon sugar substitute like equal

1 teaspoon salt


1 bunch daikon or red radish about 12 pieces, washed, pat dry, stems removed and thinly sliced.

1 small size red bell pepper, seeded and diced small

1 small cucumber, peeled and seeded and diced small

1 ripe yet firm mango, peeled, pitted and diced small

2 tablespoons black and white sesame seeds

2 tablespoons extra virgin olive oil


Combine marinade ingredients in a small bowl. Add daikon and let stand for 15 minutes. Meanwhile, combine bell pepper, cucumber, mango in a medium salad bowl.

Drain daikon reserving the marinade.

Combine daikon with the rest of the vegetables.

Taste, slowly add reserved marinade if needed or desired. Toss.

Drizzle oil and slightly toss.

Garnish with sesame seeds. Serve cold.
