Oven Roasted Free Range Chicken
1 whole free range chicken
2 tbsp. creole seasoning
1 tbsp. olive oil
Preheat oven at 350º F.
Remove extra fat in chicken if preferred.
Rinse and pat dry the chicken with paper towels.
Massage with the olive oil.
Sprinkle with the creole seasoning inside and out.
Place in oven-safe dish and loosely cover with foil.
Roast for an hour.
Remove foil (do not throw).
Increase oven temperature to 400 º.
Return to the oven for another hour or when browned.
Let the chicken rest for 5 minutes, loosely cover with the foil.
Slice and serve.
