Pan De Sal

10 ozs water
3/4 oz yeast
22 ozs bread flour
2 ozs non fat dry milk solids
2 ozs sugar
2 ozs butter
1 egg
2 tsps salt
Mix everything in a bowl, following the order the ingredients were listed. With your dough hook, mix dough for about 6 minutes. Transfer to a slightly floured bowl and let rise until double in bulk. Punch down, divide into 3 equal balls. Let rest about 15 mins. Flatten dough to a rectangle with your fingers. Roll out as for a jelly roll, do all three balls the same way. Cut into small ovals, roll in bread crumbs. Put on parchment lined sheet pans. Allow to double in size. before baking in a 375 oven for about 12 mins
