Pancit Guisado by Priscilla Dionisio


Ingredients :


2 packages of bihon noodles 

3 pieces Chinese sausage sliced thin

2 boneless chicken breast sliced thin

1 cup of shrimp, shelled & deveined

½  to 1 cup of chicken broth

1 cup of sliced green beans

2  medium carrots, sliced into strips

½ cup of sliced celery (including the leaves)

½ Nappa cabbage sliced thin

1 medium sized onions, minced

3 gloves of garlic minced

¼ cup soy sauce

1 tsp salt

a dash of ground pepper

3-4 tbsps of vegetable oil

3-4 tbsp of olive oil to drizzle the pancit before serving


Procedure:


1.  Soak pancit bihon in cold water for 10-15 minutes. Then drain and set aside.

Meanwhile prepare all ingredients and assemble in a tray.

In a pan, fry the Chinese sausage until cooked.  Add onions & garlic stirring constantly to avoid burning.

Then add the chicken breast, salt, pepper & soy sauce.

Continue cooking then add carrots, green beans & celery.  Cover and cook for a few minutes then add Nappa and chicken broth until it comes to a boil.

Add the bihon noodles mixing well to distribute the flavors. Taste and adjust seasonings to desired taste.

Transfer into a serving bowl and drizzle with olive oil and garnish with sliced green onions.

Serve with puto, kutsinta or pan de sal.
