PASTA SARCIADO WITH ANDOUILLE SAUSAGE

Serves 4 to 6
1 package andouille sausage
2 tablespoon extra virgin olive oil
Pre heat grill pan over medium to high heat. Place sausage on the grill and cook for about 5 minutes until sausages are slightly brown. Cool down slightly and slice into ½ inch thick. Set aside.
Pasta Sarciado

Cooking Time: 25 minutes
Serves: 4 to 6
1box spaghetti or penne pasta, 16 oz
2 tablespoon olive oil
2 large yellow onions , peeled and sliced thinly
2 pints grape tomatoes cut into halves
2 cups cilantro leaves, chopped
2 cups basil leaves, chopped
Juice of 1 lemon
½ cup heavy cream
½ teaspoon salt and pepper
Grated cheese such as parmegianno, gruyere, fontina as toppings – option
Cook the pasta according to box instructions; 12 minutes. While the pasta is cooking, heat the oil in a large non stick sauté pan for 1 minute. Add onions and cook for 3 minutes over medium to high heat stirring occasionally. Add tomatoes and cook for another 3 minutes stirring occasionally or until tomatoes are soft and onions are slightly brown. Add lemon juice, cilantro and basil and cook for another 3 minutes stirring occasionally. Drain pasta using a colander when it is cooked. Immediately add pasta to the sarciado mixture and keep tossing cooking the pasta a little bit more. Slowly add cream making sure it is combined thoroughly. Add salt and pepper to taste. Stir in cheese if desired. Top with sausage slices. Serve hot.
