BAKED CALDERETA RIBS

 

Prep time: 5 minutes

Cooking/Baking: 2 hours at 350 F

Serves: 8 people

 

5 cloves of garlic, minced

1 can crushed tomatoes, 14.5 oz

2 adobo chipotle chiles. ( I used chiles in adobo sauce which we can find in regular stores)

½ cup brown sugar

1 cup water

Salt to taste

5 pounds baby back ribs

 

Preheat the oven at 350 F. Puree the first 6 ingredients using a blender until smooth.  You should come up with 3 cups of sauce. Lay the ribs meat side down in a large disposable aluminum tray and pour 2 cups of the sauce. Make sure the ribs are well coated with the sauce. Cover the dish tightly with aluminum foil and bake for 2 hours until the meat begins to pull away from the ends of the bones and the ribs are just tender.  Remove ribs from the oven, adjust oven to 425 F, uncover and bake for another 1 hour basting the ribs in its sauce occasionally.
