QUICK CHICKEN PARMEGIANA CORDON BLEU

Prep time – 10 minutes

Cooking time – 30 to 40 minutes

Yields – 6 servings

6 chicken boneless, skinless chicken breasts (about 1 ½ pounds)

2 cups Italian bread crumbs

Salt and pepper to taste

½ cup dried oregano

½ of large container plain non fat yogurt

Cooking spray

1 jar store bought marinara sauce

1 package ham slices, halved

1 package swiss cheese slices

Pre heat the oven to 350 F. Pat dry the chicken using paper towels.  Using a large mixing bowl, combine the bread crumbs , oregano and salt and pepper.  Brush chicken with yogurt and then toss or roll chicken in crumbs. Place chicken in a bake tray sprayed with cooking spray.  Bake chicken for 20 minutes. Remove from the oven and add marinara sauce and bake for another 10 minutes or longer depending on the thickness of the chicken. Remove from the oven, top each chicken with ham slice and cheese slice. Return to oven and bake until cheese is melted.
