RACK OF LAMB WITH GARLIC BUTTER

Prep Time: 5 minutes

Cooking Time: 8 minutes

Yield:  4 servings


2 tablespoon olive oil

½ teaspoon salt and pepper

1 rack of lamb – excess fat trimmed

2 garlic cloves, minced and mashed to a paste with ¼ teaspoon salt

½ stick unsalted butter


Pre heat oven to broil at 400 F.

Rub the lamb with oil and the salt and pepper.  Cut the rack of lamb and separate from each other to reduce the cooking time.

Broil on rack of broiler 5 inches away from the heat turning once, total 7 minutes for medium rare.  Spead the garlic butter over lamb.

Transfer garlic with the butter and pulse using a small food processor. Transfer to a bowl and keep in the refrigerator until ready to serve.
