ROASTED BBQ CHICKEN WITH YOGURT DRESSING
Prep Time: 5 minutes
Cooking time: 20 minutes
Yields: 4 servings
6 pieces boneless and skinless chicken breasts
1 package Mama Sita’s barbecue mix
Fat free cooking spray
10 pieces green asparagus, ends sliced off
1 medium size green zucchini – sliced in an angle 1 inch thick
1 medium size red onion, peeled and cut into 8 wedges
4 tablespoons olive oil
Salt and pepper to taste
Pre heat and set oven to “roast” at 400 F.
Line a foil over a baking sheet and coat with pan spray.
Rub mix all over the chicken breasts.
Lay chicken breasts into the sheet and bake for 20 to 22 minutes.
Meanwhile, toss asparagus, zucchini and red onion with oil and medium mixing bowl.
Season with salt and pepper
Half way through roasting the chicken, add the vegetables and continue to roast.
Remove from the oven when finished and cool chicken down for 5 minutes before slicing.
YOGURT DRESSING:
Prep time – 2 minutes
Yields: 1 cup
1 container fat free yogurt – excess water poured off if there is any.
½ teaspoon of the following – cumin powder, turmeric powder, paprika,
¼ teaspoon ground cinnamon
Salt and pepper to taste
Whisk all ingredients and chill in the refrigerator.
HONEY PATIS VINAIGRETTE
Prep Time – 2 minutes
Yields – ½ cup
2 tablespoons patis
2 tablespoons balsamic vinegar
2 tablespoons honey
¼ cup olive oil
Whisk all ingredients together and put aside until all components are ready to mix.
TO PREPARE:
Combine roasted vegetables. Drizzle a little honey patis vinaigrette and toss lightly. Serve right away.
Slice the chicken against the grain, drizzle a little yogurt dressing on top.
Serve together.
