ROASTED TURKEY BREAST WITH CRANBERRY AND APPLE STUFFING with GARLIC PAN GRAVY OR KALDERETA FLAVORED PAN GRAVY

Prep time: 2 minutes

Cooking Time:  45 minutes

Serves: 8 to 10

4 pounds boneless turkey breast (whole)

4 tablespoons olive oil

1/3 cup poultry seasoning (can also substitute turkey seasoning if desired)

Pre heat the oven to roast to 425 F.

  Pat dry turkey using paper towel. Massage oil into the turkey and then rub poultry seasoning all over and under its skin.  Set the rack in the center of the oven and place turkey in a baking sheet or aluminum foil tray and roast for 30 minutes. Turn turkey over and roast for another 15 minutes. Remove from oven, cover loosely with aluminum foil and allow turkey to rest for 15 minutes before slicing into thin slices.

CRANBERRY AND APPLE STUFFING

Prep Time: 15 minutes

Cooking Time: 9 minutes

Serves:  8 to 10

2 tablespoon olive oil

4 celery stalks, diced small

1medium yellow onion, peeled and diced small

2 tablespoon of the following herbs, finely chopped – sage, oregano, thyme, rosemary

¼ pound prosciutto (6 pieces) – thinly sliced (request your butcher to slice it)- finely chopped

1 pound jalapeno and corn bread – crumbled (can use plain corn bread)

2 cups dried cranberries

1 to 1 ½ cups low sodium chicken broth

1 green apple, diced small

   Heat the oil over medium to high heat using a large non stick saute pan; 1 minute.  Add celery and onions and cook for 5 to 7 minutes stirring occasionally until soft. Add herbs, prosciutto, cornbread, and cranberries and continue to stir and cook for 2 minutes.  Reduce heat to medium and add broth and apple stirring constantly. Cook for another minute. Remove from pan. Serve with the sliced turkey breast and gravy.

GARLIC PAN GRAVY

Prep Time: 2 minutes

Cooking time: 6 minutes

Yields – 3 cups of gravy

¼ cup olive oil or 4 tablespoons butter

1/3 cup All Purpose flour

1 tablespoon garlic powder

Turkey drippings (from the baking tray where turkey was roasted)

3 cups low sodium chicken stock

2 tablespoon A1 sauce

3 tablespoon light soy sauce

    Heat the oil or melt the butter using a medium sauce pan for a minute.  Add flour and garlic powder and cook for a minute stirring constantly. Add turkey drippings, stock, A1 and soy and bring to boil for 3 minutes or longer until the sauce thickens.  Reduce heat to low and simmer for another 2 minutes. Remove from pan, transfer to a bowl and serve with the turkey and stuffing

KALDERETA FLAVORED PAN GRAVY

Prep Time – 2 minutes

Cooking time 6 minutes

Yields - 3 cups of gravy

¼ cups olive oil or 4 tablespoons butter

1/3 cup All Purpose flour

Turkey drippings (from the baking tray where turkey was roasted)

½ package Mama Sita’s kaldereta mix

3 cups low sodium chicken stock

   Heat the oil or melt the butter using a medium sauce pan for a minute. Add flour and cook for a minute stirring constantly. Add turkey drippings, stock  and mama sita’s kaldereta mix and continue to cook for another 3 minutes or longer until sauce thickens. Remove from pan, transfer to a bowl and serve with the turkey and stuffing.
