RON’S HEALTHY CHICKEN PAPRIKA

Yields: 8 servings
4 tablespoons canola or vegetable oil
1 large onion, peeled and diced
2 ½ skinless boneless chicken breasts (4 pieces) each breast cut into 4 pieces
1 cup all purpose flour
½ cup white wine
2 cups chicken stock or broth
¼ cup sweet paprika
Salt and pepper to taste
1 cup Fat free sour cream
1 red bell pepper, seeded and diced small
1 cup scallions, chopped for garnish
Using a large non stick saute pan, sweat onions with half of the oil for about 5 minutes until onions are soft and caramelized. Remove from the pan and set aside.
Place flour in a large zip loc bag and add the chicken pieces, seal the bag and toss the chicken.
Add remaining oil to the pan. Remove chicken pieces from the bag and shake excess flour. Place chicken into the pan and cook for about 3 minutes each side until chicken pieces are brown. Season with salt and pepper.
Add onions to the chicken, add the wine and cook for 30 seconds until the alcohol boils off. Add the broth and the paprika.
Reduce heat to medium, cover and cook for another 5 minutes. Stir in sour cream and bell peppers. Transfer to a platter and garnish with scallions. Serve right away.
