SIZZLING ORANGE AND GINGER TILAPIA FILLETS

Note: You can also use fish like striped bass, swordfish and halibut

Prep Time:  10 minutes

Cooking Time: 6 minutes

Serves: 4 people


2 tablespoon brown sugar

1 teaspoon ginger, peeled and minced

Juice of 1 orange

1 tablespoon orange marmalade

5 cloves garlic, minced

4 tilapia fillets, 6 oz each

2 tablespoon olive oil

1 ½ tablespoon light soy sauce

Combine the sugar, ginger, orange juice and marmalade in a blender and puree until smooth.  Pour into a shallow casserole or baking dish and lay tilapia fillets in the mixture and marinate for about 20 minutes.

Drain the fish. Reserve the marinade.  Heat a large non stick skillet with the oil; about 1 minute. Add tilapia fillets and let cook for about 2 minutes or until fish turns a little brown on the edge. Turn the fish on another side and cook for 1 minute.

Pour off reserved marinade into the skillet and turn the heat to medium. Add soy and let the sauce sizzle and thicken in another 1 ½ minutes. Serve with mashed potato or steamed rice.
