SKEWERED CHICKEN WITH SPICY PEANUT-MANGO SAUCE

Serves: 8 to 10
4 boneless chicken breast fillets, cut into strips (about 2 pounds) – cut into ½ inch slices , about 6 slices per breast. Then cut each slice in half cross wise, giving you 48 pieces.
20 bamboo skewers – soaked for at least 2 hours or longer in water
½ cup light soy sauce – if using regular soy, please dilute with water to remove excess sodium
1 tbsp olive oil
Salt and pepper
SAUCE:
½ cup peanut butter crunchy or creamy
2 tbsp light soy sauce
Juice of 1 lime
1 ripe mango, peeled, pitted and coarsely chopped
¼ cup raisins
½ cup water + 1 tablespoon
¾ teaspoon pepper flakes
Combine soy, oil and salt and pepper. Coat the chicken cutlets in the mixture and marinate for about 5 minutes. Thread 1 cutlet onto the end of each skewer. Grill using a grill pan coated with cooking spray. Grill over medium to high heat for about 2 minutes each side. Remove from pan and arrange in a platter. For the sauce - Combine all sauce ingredients in a blender and puree. Serve with the chicken skewers.
