Smoked Bangus and Sundried Tomato Spread
Note: You can use hot pandesal making it more Filipino. If pandesal is not available, Hawaiian bread is a good substitute for it. If you want to serve it light, thin saltine crackers will do. Thinly sliced toasted French bread is an option to serve this spread with if you want to make it upscale.

Serves: 15 if using with toasted pandesal
1 salted egg, peeled and coarsely chopped
1 large boneless bangus, skin removed and coarsely chopped
½ cup fat free mayonnaise
1 cup sundried tomatoes, coarsely chopped- (do not use the oil packed jar)
½ cup basil leaves, chopped
Zest of 1 orange
Combine all ingredients in a large mixing bowl. Serve with toasted pandesal.
