SMOTHERED CHICKEN WITH MISO AND LABANOS

Cooking Time: 30 minutes

Serves: 6

 

2 medium size chicken cut into several pieces

1 cup all purpose flour

1 teaspoon salt and pepper

½ cup canola oil

1 medium size white radish, peeled and cut into ½ inch thick circles

2 medium size yellow onions, peeled and diced

5 cloves of garlic, minced

1 can crushed tomatoes, 14 oz

½ cup dry white wine

3 pieces dried bay leaves

¼ to ½ cup of yellow miso paste – (depends on how salty it is)

   In a mixing bowl, combine flour, salt and pepper. In a large sauté pan, heat the oil for about 1 minute. Shake excess flour from the chicken and then add the chicken and radish into the pan and allow it to brown, about 6 to 8 minutes.  Remove radish from the pan and set aside.  Add onions, garlic, crushed tomatoes and white wine (optional) and cook covered over medium heat for 20 minutes until chicken is cooked and the sauce has thickened.  Add miso and radish and cook for another 2 minutes.  Season with ground pepper if desired. Remove bay leaves and serve right away.
