SOUTHWESTERN BARBECUE SHRIMP PIZZA

Cooking Time: 8 minutes each pizza
Serves: 10
1 pound medium size shrimp, peeled and de-veined, sliced in half
2 cups barbecue sauce – store bought (or leftover caldereta sauce)
1 teaspoon ground cumin
½ teaspoon salt and pepper
10 fat free flour tortillas (8 inches diameter)
2 cups reduced fat shredded cheddar cheese
1 small red onion, thinly sliced
1 small can (8-oz) corn – drained
1 cup cilantro leaves, finely chopped
Pre heat oven to 400 F
Combine shrimp, 1 cup sauce, cumin and salt and pepper in a small mixing bowl and toss well. Spread remaining sauce on one side of all the tortillas. Evenly divide shrimp on 10 tortillas, do the same with the corn, onions, cheese and cilantro leaves.
Place 2 tortillas in ½ half sheet baking pan and bake for 6 to 8 minutes until cheese are melted and tortillas are crispy. Remove from the oven, cool down for 10 seconds, slice and serve right away.
