SPICED BANANA CUE WITH SPICED FRUIT AND NUTS

– served with vanilla ice cream

Cooking time: 7 minutes

Serves: 4

 

1 tablespoon butter

2 tablespoon brown sugar

½ cup chopped raw pecans

½ cup chopped raw walnuts

2 teaspoon ground pepper

½ teaspoon nutmeg

½ cup dried white raisins  

3 medium size ripe bananas – peeled, sliced in angle and vertically, 1 ½ inch thick; 1 banana can have at least 6 slices.

2 teaspoon vanilla extract

¼ cup rum

½ gallon - Fat Free Vanilla Ice Cream

 

In a hot skillet, melt the butter and the sugar for about 1 minute. Add the nuts, pepper, nutmeg and raisins and cook for 3 minutes over medium heat stirring until a little bubbly.

 

Add bananas and vanilla extract and continue to cook and shaking the pan occasionally until bananas are caramelized, about 2 minutes. Turn off stove and add the rum and let it cook for another minute. Remove from pan.  

 

Evenly divide banana mixture in 4 individual bowls and top each with at least 2 scoops of ice cream.
