SUMMER CHILLED FRUIT SOUP


Prep Time: 5 minutes

1 cup Mango sorbet – I use Ciao Bella from Whole Foods

1 bag (10 oz) of Frozen Peaches – I use Columbia River from Whole Foods

½ small fresh papaya, peeled, seeded and diced large – 2 cups

Juice of 1 lemon

2 teaspoon vanilla extract

1 cup cold water or crushed ice


Combine and puree using a blender. Serve cold.



MANGO JELLO


Prep Time: 5 minutes

Yield: 1 square plastic Tupperware (small)


2 envelopes of Knoxx gelatin powder

1 cup water

1 ½ cup Mango sorbet

2 tablespoons rose flower water or 3 tablespoons pineapple extract


The sorbet has to be in liquid state.

Dissolve the powder into the water.

Whisk it in the sorbet adding the rose water or the pineapple extract.

Keep in the refrigerator for 2 hours or longer until solid.

Cut into small squares and garnish in the center of your soup.
