UBE CREAM PIE

Ingredients For Filling:


1 Jar of Ube Jam

1 Quart of Heavy Cream

2 Tbs. of Gelatin Powder

2/3 C. Sugar


Ingredients For Crust:


1 ½  C. Coconut Flakes

4 Tbs. Butter

1/4 C. Flour

¼ Tsp. Salt


Mix together and bring to a boil the ube jam, gelatin powder (gulaman), and one cup of heavy cream is a heavy saucepan. Cool and set aside. In a mixer, whip the remaining heavy cream with sugar and then combine ube filling and whip until the filling is light and fluffy with a mousse like consistency.


For the crust, mix together the coconut flakes, melted butter, flour, and salt. Press flakes on the bottom of a 9” pie pan. Bake at 350 degrees for 15 – 20 minutes, until golden brown.


Let crust cool and when ready to serve combine filling with the crust and top with additional whipped cream, if desired.
