WATERMELON SALAD

Prep Time: 20 minutes

Yields: 4 serving


¼ seedless watermelon, peeled and diced large (about 3 cups)

1 large Roma tomatoes, seeded and diced large

1 small cucumber, peeled, seeded and diced large

¼ to ½ cup fat free Feta Cheese, crumbled

¼ cup green olives, halved

¼ cup kalamata olives, halved

¼ cup cilantro leaves, finely chopped

1 teaspoon fresh oregano, finely chopped

1 tablespoon lemon juice

¼ teaspoon salt and pepper

1 tablespoon olive oil

Combine all ingredients in a large mixing bowl, chill in the refrigerator for 10 minutes.  Divide into 4 shallow bowls and serve.
