WINTER GREENS IN WARM BACON DRESSING

Prep Time – 5 minutes

Cooking Time – 7 minutes

Yields: 6 to 8 servings

1 bag spinach leaves, washed and pat dry

1 green endive, base removed and leaves separated, cut into thin matchsticks

1 pear (Anjou, Bartlett or any kind), cored, peeled  and cut into thin wedges or diced

1 large orange, peeled and supreme (cut into wedges without the membrane)

1 cup feta cheese, crumbled

Dressing:

4 to 6 strips apple smoked bacon – diced

¼ to ½ cup rice wine vinegar or Mama Sitas Coconut vinegar nectar

1 tablespoon brown sugar

1 teaspoon mustard

Salt and pepper to taste

Pre heat a small non stick skillet and add the bacon. Cook bacon until crisp and brown, about 5 to 7 minutes over medium to high heat. Add vinegar, sugar and mustard. Season with salt and pepper and pour hot dressing into the greens and serve right away. Use dressing as desired.

To serve – Combine spinach, endive, pear in a large mixing bowl. Slowly pour off hot dressing and toss lightly. Add orange wedges and feta cheese on top and serve right away.
